AMARANTH/RAJGIRA PANEER CHEELA
- 1 cup rajgira/ amaranth flour
- 1/2 cup crumbled or grated paneer
- 1/4 cup curd
- Water as required to make a medium consistency batter
- Add jeera powder, finely chopped fresh coriander leaves, onion, green chillies and salt to taste
- Spices and herbs can be added as per preference
In a bowl, add flour, curds, salt, chili, jeera powder, coriander leaves mix well. Using water (as required) make a smooth medium consistency batter. On a non-stick pan add few drops of oil and spread the batter to make round medium thick cheellas and cook on both sides. Top up with grated paneer and serve hot with green chutney.

AMARANTH/RAJGIRA KADHI
- 1/4th 1 cup rajgira/ amaranth flour
- 1 cup sour curd
- Turmeric, chilli powder, salt to taste
- Water as required (same as regular kadhi)
Add the ingredients listed above in a bowl and mix well. In a wok, heat oil or ghee, add mustard seeds, curry leaves, dried red chili, and asafetida powder. When the mustard seeds begin to splutter, add the prepared mixture and bring to boil. Simmer over a low heat till it thickens a bit. Serve hot with rice, khichdi, pulao or dish of your choice.
